In my circle, many people celebrate the multi-everything type of bathroom (see the picture), but I do not understand why it is so important. I only know that I do not want to share the bathroom with men, but they tell me that I am excluding others with my option.

Are mixed-bathrooms better and more inclusive?

Safety comes first. According to data from the UK:
“Just under 90 per cent of complaints regarding changing room sexual assaults, voyeurism and harassment are about incidents in unisex facilities.
What’s more, two thirds of all sexual attacks at leisure centres and public swimming pools take place in unisex changing rooms.
Of 134 complaints over 2017-2018, 120 reported incidents took place in gender-neutral changing rooms and just 14 were in single-sex changing areas.”

Since the Science, Feminism and Masculinities Congress held last February 2020, a scientific debate has been opened on this subject. The organization produced the document: Evidence-based recommendations for the creation and use of bathrooms and changing rooms in socio-educational institutions. A summary of the existing scientific debate is:
One of the proposals put forward by the panel was that it would be convenient to add options rather than reduce them and that, to this end, and given that there are people who are calling for the existence of neutral bathrooms, these third spaces should be added for those who prefer them, but without eliminating the current segregated spaces. In this way, the possibilities in a diverse society are broadened instead of reduced. The general approach to achieving greater freedom and plurality, while promoting safe environments for all people, is about opening up more options for the use of bathrooms and changing rooms and not reducing them to a single option. The addition of neutral facilities provides a safe and free of any judgment space to use the bathroom, as well as recognition for the LGBTIQA+ collective. An inclusive approach to toilets is not just for women, nor for men, nor is unisex exclusively the set of toilets that the community requires.
